Description
Sodium Citrate (C6H9NaO7) is a white to off-white crystalline powder or granules, odorless, with a cool salty taste. The product has a purity of not less than 99% and is stable in air. It is highly soluble in water, forming an aqueous solution with a pH of about 8, and is insoluble in ethanol. Sodium Citrate is produced by neutralizing citric acid with sodium hydroxide or sodium carbonate, followed by concentration and crystallization. This ingredient is widely used due to its unique properties as an acidity regulator, emulsifier, and stabilizer.
