Description

Bromelain is an enzyme supplement, a sulfhydryl protease extracted from pineapple juice and peel. Its molecular weight is 33,000. The optimal pH for the hydrolysis of casein, hemoglobin, and BAEE is 6–8, and for gelatin, it is 5.0. The enzyme selectively hydrolyzes peptide chains on the carboxyl side of basic amino acids (e.g., Arginine) or aromatic amino acids (e.g., Phenylalanine, Tyrosine). It can also selectively hydrolyze fibrin and break down muscle fibers. The product is supplied as a light yellow powder with an activity of 200,000–400,000 IU/G. High stability and solubility ensure ease of use in various manufacturing processes. EU Organic, FDA, ISO, Kosher, and Halal certifications are available.
