Description
Carrageenan is a linear polysaccharide composed of D-galactose and 3,6-anhydro-D-galactose residues. Depending on the position of the hemisulfate group attached to galactose, carrageenan is classified into several types, including kappa-, iota-, and lambda-carrageenan, as well as their mixtures, with the kappa-type being the most common. The product is supplied as white or light brown granules or powder, odorless or with a slight odor, and a sticky texture. When dissolved in water at approximately 80°C, it forms a viscous, clear or slightly milky solution that flows easily. For purchasers, the specification of carrageenan type (kappa, iota, lambda), its viscosity, solubility, and stability under various processing conditions are crucial.
